Preheat the oven to 375°F/ 170°C.
Butter 4 small soufflé dishes, sprinkle with organic cheese and hemp seeds to cover bottom of soufflé dish.
Make a green roux by blending the butter and flour together over medium heat stirring to cook the roux for a few minutes.
Beat in the hot milk, bring to a boil while stirring. Stir until very thick and smooth.
Remove from heat and add salt, pepper, cayenne and nutmeg.
Quickly stirring with a whip, add the egg yolks to the milk mixture.
Stir in cheese and hemp seeds.
Beat egg whites to a stiff peak with a pinch of salt.
Gentle fold the egg whites into the green cheese mixture.
Pour mixture into soufflé dish.
Place in oven and bake for 40 minutes (with a little prayer).
